Peanut Butter Cookies for Dinner

20130201-231934.jpgWhen Maurizio is traveling and I’m left to my own devices I become a bit undone at dinner. Peanut butter was the central theme of last night’s dinner at home. To give it some flair I made chewy peanut butter cookies, removed from the oven when they were seemingly still raw. But all you cookie aficionados out there know that “raw” yields a chewy cookie. Never over-bake if you want chewy.

The right pairing is important with a peanut butter cookie dinner; the pairing de rigueur is a tall glass of cold milk. A thoroughly satisfying meal!

Peanut Butter Cookies


  • 113 grams / 1/2 cup softened butter
  • 129 grams / 1/2 cup peanut butter
  • 100 grams / 1/2 cup sugar
  • 100 grams / 1/2 cup brown sugar
  • 1 large egg
  • 150 grams / 1 1/4 cups sifted flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt


  • Preheat oven to 350º.
  • Mix the dry ingredients together.
  • Mix the remaining ingredients together.
  • Gradually mix in the flour mixture until fully incorporated.
  • Chill the dough for one hour.
  • Roll into one inch balls.
  • Flatten the balls and then press down with a fork dipped in sugar.
  • Bake for 8 to 10 minutes on a cookie sheet lined with oven paper.
  • Remove from the oven when the cookies still seem to be somewhat raw and still very soft to the touch. This will yield a chewy cookie.
